Help the homeless this Thanksgiving

On Tuesday the 23rd Come and help our Friend Bruce Cooper get out of this silly "Turkey" outfit by donating a turkey at this location. Bashas store @ Chandler Heights and Gilbert Rd. 4-7 PM. If you can't make it and want to donate money for a turkey call me. Donations go to Saint Vincent De Paul.

Four Layer Dessert from Sheryl Stone

Four Layer Dessert from Sheryl Stone

1/2 Cup Butter
1 Cup Flour
1/2 Cup Ground Pecans

Cut like pie crust and press into a 9x13 pan. Bake 15 minutes at 350 degrees.  Cool crust.

1 Cup powered sugar
1~ 8 oz. pkg. cream cheese
1 cup Cool Whip
2 small pkgs. instant pudding (I used pumpkin but you can use any flavor).
3 cups milk

1 Cup Cool Whip

Beat cream cheese and sugar until fluffy: fold in 1 cup Cool Whip. Spread over crust.

Make pudding according to instructions, but use only 3 cups of milk. (If using lemon pudding, add lemon juice to taste). Spread over cream cheese layer. Frost with Cool Whip and serve!

Pork Chops and Applesauce

Pork Chops and Applesauce.... In the crock-pot... YUMMY
6 Boneless Pork Loin Chops

4 Golden Delicious Apples (Cored and sliced)

3 Tablespoons Light Brown Sugar

1 Teaspoon Ground Cinnamon

1/2 Teaspoon Salt

Place pork in the bottom for the crock-pot. Cover with Apples... Mix
Brown Sugar, Cinnamon and salt , sprinkle on top of apples. Cook on low
6 to 8 hours...

Pumpkin Pie in a Cake

Pumpkin Pie in a Cake
Grease a 13x9 pan.
Preheat your oven to 350.
“crust”:
1 box of yellow cake mix
1 stick of butter, room temperature
1 egg
Set aside 1 Cup of yellow cake mix for use later.  Beat the rest of the cake mix, the butter and egg in a medium mixing bowl.  When well combined, press the batter into the prepared pan for a “crust”.
Filling:
1 30 oz. can of pumpkin pie filling *
1 15 oz. can of evaporated milk **
1 C. sugar
3 eggs
1 tsp cinnamon ***
Beat the above ingredients together until the mixture lightens in color and texture.  Pour this into the pan on top of the crust. ****
Topping:
1/4 C sugar
1/2 stick chilled butter
1 C reserved cake mix
1 C chopped pecans
Beat everything except the pecans in a medium bowl.  When it is combined and crumbly, add in the pecans and mix with a spoon.  Spread this evenly over the filling.
Bake this in the oven for 75 minutes or so.  The cake should look very moist, but shouldn’t “jiggle” when it’s moved.  Let the cake cool.  Serve with ice cream or whipped cream.

Not only because of the cooler weather but it seems like life gets happy.  With lots of birthdays & holiday celebrations coming up let the fun begin.

Tuesday we celebrated David my brothers birthday with Mom.  Each day we have with her is a celebration.  We are so blessed to have her at age 90.  God has blessd our family over and over again.   Happy Birthday David.  It was a great day!

Yet another Peach cobbler!

Peach-Pecan Cobbler~ A Country Home Recipe    
3/4  cup granulated sugar
    1 Tbsp.  Cornstarch
    1/2  tsp. ground cinnamon
1/4  cup water
4 1/2  cups sliced peaches (I do not peel mine)
approx. 11/2 -2 lb. of peaches
Rolls
1 cup of self-rising flour
(if you do not have self rising flour add 1tsp. baking
powder, 1/2 tsp salt, and 1/4 tsp. of baking soda to 
 flour)
    1 Tsp. granulated sugar
    1/4 cup of butter
1/3 cup of buttermilk
Filling for the Rolls
2 Tbsp. butter, melted
    2 Tbsp. brown sugar
    1/2 cup of chopped pecans
Peach Filling instructions
In a medium saucepan, combine the 3/4 cup granulated sugar, the cornstarch, and cinnamon; stir in the water.  Cook and stir until thickened and bubbly.   Add peaches; return to boiling.  Cover and keep warm over very low heat.
Pecan Rolls instructions
In a mixing bowl, combine the self-rising flour and the teaspoon of sugar.  Using a pastry blender, cut the butter until the mixture resembles coarse crumbs.  Add buttermilk and stir until just moistened.  Turn out onto a lightly floured surface.  Knead dough gently for 10 to 12 strokes.  Roll into a 9 x 6 inch rectangle.  (just like you are making cinnamon rolls.  Combine the melter butter and brown sugar; spread over dough to within 1/2 inch of the edge.  Sprinkle the chopped pecans evenly on the dough surface.  Roll up dough in a spiral, starting with a short side. Cut the roll cross-wise into six 1-inch thick slices. Pour hot peach mixture into and ungreased 2 quart square (8x8x2-inch) baking dish.  Or you can use a pie dish like I did.  Bake in a 400 degree oven about 25 minutes or until golden brown.  You have to really watch the last five minutes, because the rolls turn brown fast.  
*I doubled the peach filling ingredients and tripled the pecan rolls to make a 9x13 size. I also peeled my peaches.
Definitely not as pretty as hers but for sure the only way I'll ever make peach cobbler for now on!

Another version of peach cobbler

Peach Cobbler
1/2 C. margarine or butter
1 C. sugar
1 C. flour
2 tsp. baking powder
1/2 tsp. salt
1 C. milk
Mix sugar, flour and milk together.  Add baking powder and salt.  Add fruit to the bottom of a 9x13 pan.  Cut up margarine into pieces and lay over peaches.  Pour batter over peaches and sprinkle with cinnamon  Bake at 350 for 35-40 minutes depending on your oven.  Excellent when served warm with vanilla ice cream or whip cream.  
  
PS. My neighbor layers it backwards and she loves it.  
Butter, batter, cinnamon then peaches.

Fall is around the corner!

I love it when FALL is around the corner for many reasons.  Cooler weather, the holidays that are before us and fall food and decor.
Here are a few of my favorites.

Pumpkin Cookies

Cream together:
2 C Sugar
2 C Crisco
Add:
16 0z. can pumpkin
2 eggs
2 tsp. vanilla
4 c flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. allspice
1 c chopped nuts optional
Drop on greased cookie sheet ad bake at 350 for approximately 10-12 minutes or until done.  Cookies are sort of crispy on the outside and soft on the inside. Taste good when frosted with cream cheese frosting. Cool cookies before frosting them
Cream Cheese Frosting
1 ~ 8 oz. pkg cream cheese
2/3 cup margarine softened
1 tsp. vanilla
2 C sifted powder sugar






Quick and easy peach cobbler

1 large can peaches with juice (or 6-8 fresh peaches, peeled and sliced)


1 1/2 C. sugar



1 C. flour

1 tsp. baking powder
1 egg
1 stick melted butter
cinnamon

Pour peaches into large pyrex dish.  Sprinkle 1/2 c sugar over top.  Mix together dry ingredients.  Add egg and mix until crumbly.  Sprinkle over peaches.  Crumble/drizzle butter over top and sprinkle with cinnamon.  
Bake in a preheated 350 oven for 30-40 minutes ot until a toothpick inserted in center comes out clean.

Today I marry my best friend ~ Alana & Arturo 9.18.10

Andrea and I drove to La Quinta Ca. this past weekend (30 miles outside of Palm Springs) to attend a family wedding.
The wedding of Alana & Arturo. Alana is my second cousin that we've watched grow into a beautiful young lady. Alana has graduated from College and continued on to get her Masters degree. Now with that behind her she married her best friend Arturo. We are so proud of you and it's been so fun watching you develope into such a role model for others.
Thank you for inviting us to celebrate with you your special day. We enjoyed seeing all the family and felt the spirit in the sky ~your dad.
Best wishes on a wonderful life together.

Coffey Ground Updates

Hi everyone.
Wow it seems like blogs aren't as popular as they used to be. I think Facebook has taken over as the favorite. I'm one to blame.
Well I've decided I'm going to update my blog once a month.
We have some exciting news to share with you as far as the sole department goes.

Ashley has applied for many non-profit organizations but in this job crunch we are all facing things are moving pretty slow for her. If you hear of anyone hiring she'd appreciate a jingle.

Andrea and Chris are doing great. They spend any spare time they have working on their home. They have a new addition to the family. A black cat named? Oops I forgot his name. I think it's Viego? Andrea started a new school year and Chris is busy designing away.

I'm keeping busy with our Home, my Mom and other stuff. Somehow it seems like the days just roll into one another anymore.
Mom fell back in May when we were at the beach. She broke her hip and has had two surgeries since then. She is recovering very slow but then again at her age it's expected. We appreciate all the prayers and support you have sent our way these past few months. We don't know what we would have ever done without the support of friends and family.

Hershey and Bear are tired of this heat. They miss there walks and outside play time. It's just too hot to leave then anywhere else but inside.

I hope this note find ou and your family doing well and staying cool. If you are our California peeps I don't fill sorry for you for being in the 60's and 70's! Get over it! Come visit us in HELL where it's 112!

In God's hands


Recently at my Mom's birthday celebration my cousin Pete shared a story with us that will give you goose bumps. The story goes like this:

A friend called him and asked if he would want to ride with him to go look at a truck that was for sale in Queen Creek. So Pete that has the love for old cars and trucks said sure. While they were there they noticed a lot of garbage all over the place so they started to pick it up and while placing some of the garbage in the dumpster Pete noticed that there were photo albums tossed in the garbage. He opened one up and there were several old pictures in these albums. While he continued to look through them he ran into a photo of My Mom and Dad in their younger years. This is the photo that I 'm posting. Pete said he got goose bumps all thru his body and thinking what are the chances of me being here at the right time and the right place. I strongly believe God had His hands all over this one. This picture will always be a treasure to our family. Thanks Pete for being at the right place at the right time.
