What a Beautiful day in the life of the Hylton's. Sunday Koston was dedicated at Cornerstone church. Where his Mom and Dad promised before God to bring him up in a Christian home. May 14th family and friends gathers to celebrate the most amazing Luz's 85th birthday. She is my Dad's sister that he loved and adored so much. I remember my Dad asking me to take care of his sister if anything ever happened to him. I've kept my promise.
She is so easy to love. This incrediable lady has been through so much and she keeps on trucking. If a mountain stands in her way she goes right through it!

Egg-citing things happening this month

Wow it's already APRIL and as the saying goes April showers bring May flowers. Well, it is literally raining right now as I am typing this note. Love, love, love, the rain but unfortunately us Zonnies don't see much of it.

The Baby story:

Speaking of showers... we are in the busy planning stages of Andrea's baby shower the end of this month. She makes the cutest pregnant Momma if I may say so, and the Dad is as cute. Only 2 months left until we get to hold our precious baby boy! That boy will never see the ground from everyone holding him :) LOL
Andrea and Chris are preparing their house for the babies arrival. The first picture is remodel in progress. Of course Andrea is just supervising!

Now for the Wedding story.

Plans are coming along nicely for
Tyler and Ashley.
The bridesmaids found dresses last weekend and they are so beautiful on each one of them just like they are inside and out. Here is a picture of just a few of the girls with the BRIDE :)

With only 6 months left we are right on schedule with all the planning. They kids engagement pictures will be this month and I can't wait to see them.

Jamie and I are keeping busy. We have 4 new members to our KOI family. Dyson, Goldie,Shananie and one other nameless one. Jamie has them trained to come to him when it's time to eat! I'm staying busy this month with lots of friends and family in and out of hospitals, planning a baby shower and planning a wedding, but soon I will be taking off those hats and leaving for the beach for 5 weeks this year. I'm coming home one week early in case the baby decides to come. I can't miss that BIG event!

Time is flying!

Well as you know their is a lot happening at the Coffey Grounds. With only 3 months to go until our bundle of joy arrives, we are busy planning a baby shower. Mom, Dad and baby are all doing great.

Then with only 7 months to go the wedding plans are coming together nicely. It's always a good feeling to check off things from the very long list. Ashley and Tyler are keeping busy with the plans and life but enjoying it all.

The weather has been just perfect and we are enjoying every minute of it.
One more thing on the calendar is our yearly beach time. San Clemente here we come. I plan to use these 6 weeks for just beach time. I'll put my wedding and baby hat away for awhile and rest up.

So as you can see life is busy but a good busy!
God is good in so many ways and we are so thankful for family & friends to enjoy this time in our lives with us.

Life at the Coffey Grounds

Well the weeks are passing quick and the baby is growing fast. Only 3 months left till we meet our new little bundle of joy. The parents -to- be are busy registering everything they need. Wow how times have change!
They are both so excited and doing well.

The wedding plans are coming along nicely also. We found "THE DRESS" last weekend and it is as beautiful as the Bride.
The bridesmaids and Matron of Honor came over to help us prepare the "Save the Dates" for the out of town guest and those are being mailed today. Yeah, I love checking two things off the list!

We are enjoying Spring Break at home sprucing up the house and cleaning out some unused items. Nothing like spring break with beautiful weather.

Our friends Betty and Ed from Texas are here visiting so we gathered up all the troops and had a wonderful BBQ Tuesday night. It's so great to see everyone and our kids all grown up and just catching up with every ones lives. We are so blessed to have this circle of friends that even though we don't see each other all the time we can pick up right where we left off.

Well as you can see the life at the Coffey's keeps on trucking. There isn't a day that goes by that I don't think of my parents. We sure miss them. What could be better than the both of them rejoicing in Heaven with our Lord and Savior.
Keep in touch and enjoy everyday to the fullest.

March 5th Ashley turned 24. Wow where does time go? In those 24 years I can truly say that we have been blessed with that contagious smile :)))

It's an exciting year for her and us. She will me an Aunt in June for the first time and a Bride in October.

Wedding time

It was a fantastic day. Andrea, Tricia (Ashley's Nina/Godmother) and I went with the Bride-to-be to try on wedding dresses. Wow Ashley looks beautiful in all the styles because she is tall and thin. Everyone was telling us she will makes a beautiful bride.
It's so hard to believe that 24 years have passed and our baby girl is getting married.
We have been so blessed with both our girls marrying wonderful guys.
All I have to say is Tyler get your handkerchief ready because she is going to bring tears to your eyes when you see her on your wedding day :)

We still are going to go shop some more because of so many dresses still to try on.

Yummy new dish

I made this new recipe last night and it was a big hit! If you're tired of your basic chicken recipes and you love Artichokes you'll love this recipe.

Happy cooking~

Chicken and Artichoke Casserole

Make 6 servings

1/2 c butter

3 cloves garlic, minced 1/2 tsp equals one clove

2 shallots, minced

1/2 c dry white wine

1 c heavy whipping cream

1 8 oz package cream cheese, softened

1 5 oz package grated parmesan cheese

2 c chopped cooked chicken

1 14 oz can quartered artichokes, drained and chopped

1 10 oz package frozen chopped spinach, thawed and squeezed dry

1/2 tsp. salt

1/4 tsp. ground black pepper

2 c 1/2 inch cubes french bread

3 tablespoons butter, melted

Preheat oven to 350, lightly grease 2 1/2 quart casserole dish or 6 individual baking dishes.

In a large skillet, melt butter over medium hgh heat. Add garlic and shallots cook for 2 minutes, stirring occasionally. Stir in wine:cook 3 minutes. Stir in cream ad Parmesan cheese, stirring until combined. Stir in chicken, artichokes, spinach, salt and pepper. Remove from heat. Spoon into prepared baking dish.

In a small bowl, combine french bread cubes and melted butter, tossing to coast. Sprinkle evenly over casserole. Bake 30 minutes or until lightly browned.

Well it's been a week since I last was on FB. I didn't miss it at all. I got so much accomplished with so much JOY that filled my life. First I want to say I did miss a lot of birthdays so forgive me and I hope you enjoyed your special day. Next I send my deepest sympathy's to my friends Jill & Susie for the loss of their fathers. I know how that feels and you are both in my prayers.

Ashley and I had a fun day in the rain last Saturday looking for bridesmaid dresses for her wedding. While Tyler was away snowmobiling with family we took the time together to get some thing checked off our list. Tyler had a great time enjoying the snow.

Andrea took a slip during all that rain we had last weekend and she is in a boot. Thank goodness she just had to make a call to daddy and before she knew it she was in a red boot! No xrays for her right now but she feels better just having her foot in a boot!

Chris is staying very busy at work and getting the house done before the big day arrives.

I'm happy and enjoying the time with my friends and family. I made a photo scrapbook about our SF trip. Great times and great memories.
Jamie and the pond are still in the landscaping stage. We will post a video of the finished project soon! He is staying busy at work saving soles!

Are you leaving room for cream?

I loved my daily devotion for today that I had to share it below. IT goes with the whole things about cutting back on Texting, FB, etc. I decided to blog because if you follow my blog you are truly interested in the lives of the
Coffey Grounds.
FB is nothing but gossip and much time that was spent away from loved ones for me!
So with that said... I hope you understand if you don't see much of me or maybe not even at all on FB. I love the old fashion way of seeing you in person or talking on the phone.
Nothing happened something just made me realize how we take life for granted with the simple things of life.
So far this week I've had more time with God, friends and hope to see some family members soon. I have a lot of planning this year as many of you know Baby & Wedding. I've started walking (and even took the dogs with me) that was an experience!

So enjoy your day and take time to see the signs all around you.
Even stop to smell the roses!

"Shall I leave room for cream?" the smiling barista asks me as I place my coffee order.

I smile back at her and nod, anticipating receiving my cup full of dark liquid so I can carry it over to the doctoring station and customize it with a generous splash of cream and two sweeteners.

As I wait in line to create my comfort in a cup, I ponder the barista's question. I think about the idea of leaving room for cream—not just in my cup, but in my life. I always leave room for cream in my coffee, but I can't honestly say I always leave room for cream in my life.

Cream sweetens and lightens and richens. How do I leave room in my life for the things that sweeten and lighten and richen? As I pour and stir, my thoughts drift to the last week. I've done the have-to's: laundry, carpool, dishes, exercise. But it's harder to think of those little extras that fill my cup to the brim... sweet, light, rich extras.

Sweet: Time with friends just laughing and enjoying each other. Turning on a favorite song and dancing in the kitchen. Listening to my children when they talk. Taking the extra time to hear their hearts. Putting fun things I look forward to on the calendar. Turning the pages of a novel just for the joy of experiencing a great story. Pushing pause on my life so I can rest and recharge.

Light: Time in God's Word, which the Bible says is a light for our path in life. Journaling what He's telling me and what I'm learning about life. Time to pour my worries and anxieties out to Him, then leave them at His feet. Time to press into Him so I can hear His voice above all the others in this loud, busy world. Stepping out of the rat race and worshiping Him with abandon lightens my load.

Rich: Giving of myself through my time and talent. Tithing regularly to my church. Finding people who need a meal, a donation, a word of encouragement and then making the effort to actually give it to them and not just think it's a good idea. Surrendering myself to God's will instead of holding fast to my own.

All of these are things that bring me great joy, that help me reach that place of abundance I believe Jesus wanted us to live in now. Abundance, I am finding, does not come from merely wanting it. It comes from intentionally reaching for it—a result that requires action. It requires leaving room in my life for these things—not packing my life so full of have-to's that the cup is already full.

When that happens, I can try to add the cream but it will only spill over, wasted. It starts when I leave room from the beginning or take a moment to pour out what is already too full. With a little thought and a little effort I can learn to hear Jesus ask me, "Did you leave room for cream?"

And I can smile back at Him and say, "You better believe I did!"

We are three sets of sisters out on our first adventure. We decided to go to the bay area where our parents vacationed as a family every year to visit family.
So after Mother passed away in November we moved our trip to February.
We ate, shopped, ate, walked, ate and did some sightseeing for the entire 4 days.
Thank you for praying for our safety and encouraging us to go. Our Mom and Dad started this tradition many years ago and we will carry on their legacy.

Hey everyone,
I hope you are staying warm and enjoying this weather we are having. Sorry peeps that live in the cold. I hear the blizzard is not fun!

Here is the latest at the Coffey Grounds.
We are three sets of sisters going to San Francisco for a long weekend.
I'll post stories and pictures later.

February will be a fun month. We get to find out what the sex is for our first grand baby this month. Andrea is showing and it's so exciting to see and hear her and Chris talk about the baby :)

Ashley and Tyler have picked the venue where they will be married at. It's a beautiful castle and just the perfect place for a princess to marry her prince charming.

Jamie is 80 % done with the pond in the back yard. It's so peaceful to hear the water fall. Now the planting begins all around the yard. The KOI love there new home. I'll make a video when it's done.

I'm keepig busy trying to fill the void of not having Mom around. We were so blessed to have awesome parents and it makes it a bitter sweet time in my life. I miss them both so much but I am also so thankful they are together. All because of them falling in love is why we are all here.

So as you can see life at the coffey grounds is busy, Enjoy the month of February. To my friends Jackie Baker & Brandy Baker (not related) and to our God-daughter Alicia Happy Birthday.

Green Enchilada Soup

ENCHILADA SOUP RECIPE

Ingredients:

1 to 1&1/2 lbs. Chicken

2 lg cans Green chili enchilada sauce (Macayo's) or Sun vista brand

1 reg. can of chicken broth

8 oz. cream cheese

1 sm. can mexican style corn

1/2 can black olives chopped

1 C. instant rice

2 C. half and half

Cook and shred chicken and set aside. Heat chicken broth in large pan and soften cream cheese and stir till smooth. Add remaining ingredients, including chicken. Simmer until rice tender. Serve with tortilla chips.

I have also done this in a crock pot all day so we can have it when we get home from work and it works just fine. I just cook the chicken ahead of time or in a hurry I have used store bought rotisserie chicken.

Four Layer Dessert from Sheryl Stone

1/2 Cup Butter

1 Cup Flour

1/2 Cup Ground Pecans

Cut like pie crust and press into a 9x13 pan. Bake 15 minutes at 350 degrees. Cool crust.

1 Cup powered sugar

1~ 8 oz. pkg. cream cheese

1 cup Cool Whip

2 small pkgs. instant pudding (I used pumpkin but you can use any flavor).

3 cups milk

1 Cup Cool Whip

Beat cream cheese and sugar until fluffy: fold in 1 cup Cool Whip. Spread over crust.

Make pudding according to instructions, but use only 3 cups of milk. (If using lemon pudding, add lemon juice to taste). Spread over cream cheese layer. Frost with Cool Whip and serve!

Pork Chops and Applesauce.... In the crock-pot... YUMMY
6 Boneless Pork Loin Chops

4 Golden Delicious Apples (Cored and sliced)

3 Tablespoons Light Brown Sugar

1 Teaspoon Ground Cinnamon

1/2 Teaspoon Salt

Place pork in the bottom for the crock-pot. Cover with Apples... Mix
Brown Sugar, Cinnamon and salt , sprinkle on top of apples. Cook on low
6 to 8 hours...

Pumpkin Pie in a Cake

Pumpkin Pie in a Cake

Grease a 13x9 pan.

Preheat your oven to 350.

“crust”:

1 box of yellow cake mix

1 stick of butter, room temperature

1 egg

Set aside 1 Cup of yellow cake mix for use later. Beat the rest of the cake mix, the butter and egg in a medium mixing bowl. When well combined, press the batter into the prepared pan for a “crust”.

Filling:

1 30 oz. can of pumpkin pie filling *

1 15 oz. can of evaporated milk **

1 C. sugar

3 eggs

1 tsp cinnamon ***

Beat the above ingredients together until the mixture lightens in color and texture. Pour this into the pan on top of the crust. ****

Topping:

1/4 C sugar

1/2 stick chilled butter

1 C reserved cake mix

1 C chopped pecans

Beat everything except the pecans in a medium bowl. When it is combined and crumbly, add in the pecans and mix with a spoon. Spread this evenly over the filling.

Bake this in the oven for 75 minutes or so. The cake should look very moist, but shouldn’t “jiggle” when it’s moved. Let the cake cool. Serve with ice cream or whipped cream.

Yet another Peach cobbler!

Peach-Pecan Cobbler~ A Country Home Recipe

3/4 cup granulated sugar

1 Tbsp. Cornstarch

1/2 tsp. ground cinnamon

1/4 cup water

4 1/2 cups sliced peaches (I do not peel mine)

approx. 11/2 -2 lb. of peaches

Rolls

1 cup of self-rising flour

(if you do not have self rising flour add 1tsp. baking

powder, 1/2 tsp salt, and 1/4 tsp. of baking soda to

flour)

1 Tsp. granulated sugar

1/4 cup of butter

1/3 cup of buttermilk

Filling for the Rolls

2 Tbsp. butter, melted

2 Tbsp. brown sugar

1/2 cup of chopped pecans

Peach Filling instructions

In a medium saucepan, combine the 3/4 cup granulated sugar, the cornstarch, and cinnamon; stir in the water. Cook and stir until thickened and bubbly. Add peaches; return to boiling. Cover and keep warm over very low heat.

Pecan Rolls instructions

In a mixing bowl, combine the self-rising flour and the teaspoon of sugar. Using a pastry blender, cut the butter until the mixture resembles coarse crumbs. Add buttermilk and stir until just moistened. Turn out onto a lightly floured surface. Knead dough gently for 10 to 12 strokes. Roll into a 9 x 6 inch rectangle. (just like you are making cinnamon rolls. Combine the melter butter and brown sugar; spread over dough to within 1/2 inch of the edge. Sprinkle the chopped pecans evenly on the dough surface. Roll up dough in a spiral, starting with a short side. Cut the roll cross-wise into six 1-inch thick slices. Pour hot peach mixture into and ungreased 2 quart square (8x8x2-inch) baking dish. Or you can use a pie dish like I did. Bake in a 400 degree oven about 25 minutes or until golden brown. You have to really watch the last five minutes, because the rolls turn brown fast.

*I doubled the peach filling ingredients and tripled the pecan rolls to make a 9x13 size. I also peeled my peaches.

Definitely not as pretty as hers but for sure the only way I'll ever make peach cobbler for now on!

Another version of peach cobbler

Peach Cobbler

1/2 C. margarine or butter

1 C. sugar

1 C. flour

2 tsp. baking powder

1/2 tsp. salt

1 C. milk

Mix sugar, flour and milk together. Add baking powder and salt. Add fruit to the bottom of a 9x13 pan. Cut up margarine into pieces and lay over peaches. Pour batter over peaches and sprinkle with cinnamon Bake at 350 for 35-40 minutes depending on your oven. Excellent when served warm with vanilla ice cream or whip cream.

PS. My neighbor layers it backwards and she loves it.

Butter, batter, cinnamon then peaches.

I love it when FALL is around the corner for many reasons. Cooler weather, the holidays that are before us and fall food and decor.
Here are a few of my favorites.
What are your favoties?

Pumpkin Cookies

Cream together:

2 C Sugar

2 C Crisco

Add:

16 0z. can pumpkin

2 eggs

2 tsp. vanilla

4 c flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. allspice

1 c chopped nuts optional

Drop on greased cookie sheet ad bake at 350 for approximately 10-12 minutes or until done. Cookies are sort of crispy on the outside and soft on the inside. Taste good when frosted with cream cheese frosting. Cool cookies before frosting them

Cream Cheese Frosting

1 ~ 8 oz. pkg cream cheese

2/3 cup margarine softened

1 tsp. vanilla

2 C sifted powder sugar

Quick and easy peach cobbler

1 large can peaches with juice (or 6-8 fresh peaches, peeled and sliced)

1 1/2 C. sugar

1 C. flour

1 tsp. baking powder
1 egg
1 stick melted butter
cinnamon

Pour peaches into large pyrex dish. Sprinkle 1/2 c sugar over top. Mix together dry ingredients. Add egg and mix until crumbly. Sprinkle over peaches. Crumble/drizzle butter over top and sprinkle with cinnamon.
Bake in a preheated 350 oven for 30-40 minutes ot until a toothpick inserted in center comes out clean.

Andrea and I drove to La Quinta Ca. this past weekend (30 miles outside of Palm Springs) to attend a family wedding.

The wedding of Alana & Arturo. Alana is my second cousin that we've watched grow into a beautiful young lady. Alana has graduated from College and continued on to get her Masters degree. Now with that behind her she married her best friend Arturo. We are so proud of you and it's been so fun watching you develope into such a role model for others.

Hi everyone.

Wow it seems like blogs aren't as popular as they used to be. I think Facebook has taken over as the favorite. I'm one to blame.

Well I've decided I'm going to update my blog once a month.

Ashley has applied for many non-profit organizations but in this job crunch we are all facing things are moving pretty slow for her. If you hear of anyone hiring she'd appreciate a jingle.

Andrea and Chris are doing great. They spend any spare time they have working on their home. They have a new addition to the family. A black cat named? Oops I forgot his name. I think it's Viego? Andrea started a new school year and Chris is busy designing away.

I'm keeping busy with our Home, my Mom and other stuff. Somehow it seems like the days just roll into one another anymore.

Mom fell back in May when we were at the beach. She broke her hip and has had two surgeries since then. She is recovering very slow but then again at her age it's expected. We appreciate all the prayers and support you have sent our way these past few months. We don't know what we would have ever done without the support of friends and family.

Hershey and Bear are tired of this heat. They miss there walks and outside play time. It's just too hot to leave then anywhere else but inside.

I hope this note find ou and your family doing well and staying cool. If you are our California peeps I don't fill sorry for you for being in the 60's and 70's! Get over it! Come visit us in HELL where it's 112!

Recently at my Mom's birthday celebration my cousin Pete shared a story with us that will give you goose bumps. The story goes like this:

A friend called him and asked if he would want to ride with him to go look at a truck that was for sale in Queen Creek. So Pete that has the love for old cars and trucks said sure. While they were there they noticed a lot of garbage all over the place so they started to pick it up and while placing some of the garbage in the dumpster Pete noticed that there were photo albums tossed in the garbage. He opened one up and there were several old pictures in these albums. While he continued to look through them he ran into a photo of My Mom and Dad in their younger years. This is the photo that I 'm posting. Pete said he got goose bumps all thru his body and thinking what are the chances of me being here at the right time and the right place. I strongly believe God had His hands all over this one. This picture will always be a treasure to our family. Thanks Pete for being at the right place at the right time.

Hi Everyone,

I noticed last night that I haven't posted anything lately but slide shows. I know pictures say is all but I'll try to catch you up to date.

As you all know Ashley is enjoying her internship in florida with TWLOHA. They're keeping her very busy and I think the time is going fast for her but of course for us it's slower than MOLASSES!

She is home for a week. TWLOHA was so kind to let her keep her commitment she made to her dear friends Amy Jernigan and Brandon Woodward to be in their wedding.

As excited as she is to be home she is also missing them. Chase bank was presenting TWLOHA a foam check today with huge media coverage honoring there hard work. She is bummed to be missing out on the presentation. In her words... I always wanted to hold a foam check! Hopefully with her major being Non-Profit I told her you'll get the opportunity to hold many of them!

It's going to be a busy week for her between, family, friends and BF we're thankful for mornings together. I know stop whinning and just be thankful and I am.

The timing couldn't have been better because Ashley turns 23 on Friday the day of the wedding. So it'll be a fun time together.

Andrea, Chris and Bailey are anxiously waiting for their move in date into their home. Chris has been doing some remodeling and when done wala they get to move in hopefully in 2 weeks!

I'm busy planning a 90th birthday party for our Dear Mom. I think the best part of all the planning is sharing with Mom the happenings and to see her so happy and excited.

Jamie is busy saving soles, working on his lifetime project "THE POND", keeping the dogs fit and himself ( he needs to add me to that list) and enjoys his sports on TV and live.

Then there is the king & Queen of the family. Hershey and Bear have been on a diet for a couple months and they are looking really trim. They were so happy to see Ashley arrive. They ran around the yard celebrating.

On Feb. 22nd we celebrated our Goddaughter Alicia's Sweet 16, talk about feeling old. She was just a little one and now we have school varsity softball, club ball , volleyball, boys, cell phones, boys, texing and more boys to fight against to see her! With all teasing aside we are so proud of all her accomplishments and wish her well in 2010's seasons. We can't wait to go watch her play ball.

I can't believe it's time to plan for "Life in San Clemente "again. Where did this year go? The good thing about looking forward to beach days is the day I leave Ashley comes home. So she'll be joining me at the beach until a job calls her. Woo Hoo~

Chocolate Cake Balls

A trendy sweet!

Serves: 36
Cook Time: 20 Minutes

Ingredients

1 (18.25 ounce) package cake mix

1 (16 ounce) container prepared cake frosting

6 ounces of chocolate flavored confectioners coating disks or bar (available in white chocolate, dark or milk)

Food Coloring (optional)

Favorite Combinations:

Red Velvet Cake/Cream Cheese Frosting and dipped in white chocolate coating

Strawberry Supreme Cake/Strawberries and Cream Frosting - Dipped in Chocolate Coating

White Cake/Mint Chocolate Chip Frosting - Dipped in Chocolate Coating

Caramel Cake/Chocolate Mocha Frosting - Dipped in Chocolate Coating

White Cake/Wild Cherry Vanilla Frosting - Dipped in Dark Chocolate Coating

Dark Chocolate Cake/Cream Cheese Frosting - Dipped in White Chocolate Coating

Spice Cake/Cream Cheese Frosting - Dipped in White Chocolate Coating

Lemon Cake/Lemon Frosting - Dipped in White Chocolate Coating

Confetti Cake/Vanilla Frosting - Dipped in White Chocolate Coating

German Choc. Cake. German Choc. Frosting Dipped in Milk or Dark Chocolate!

Steps

Prepare the cake mix according to the directions on the box. When cake is finished baking allow to cool for 30 minutes. Crumble the cake into a large bowl using a stand mixer or a hand mixer. Add the frosting and mix until well combined. Place the bowl in the refrigerator for at least 3 hours or overnight. I placed mine in the freezer for up to a week before I dipped. Easier to dip if frozen.

Line a baking tray with wax paper. Use a melon baller as a scooper to form balls with the cake mixture. Place on wax paper. Once you have used all of the cake mixture, place the baking tray in the freezer for 1 hour. Melt the chocolate in a glass bowl of the microwave, stirring every 5-10 seconds until smooth. At this point you can add a bit of food coloring if you are using white chocolate.

Remove the balls from the freezer. Using one toothpick, pick up the balls one at a time and dip in the chocolate. Use a second toothpick to slide the ball off the first toothpick onto the wax paper lined baking tray.

Once you have covered all the balls in chocolate coating place the tray in the refrigerator until the chocolate coating is set. At this point you can drizzle other chocolate on the balls for decoration.

Serve with a cold glass of milk!

Frog's Eye Salad

1/2 cup granulated sugar

1 tablespoon all-purpose flour

1/4 teaspoon salt

1 (8-ounce) can crushed pineapple, undrained

1 (20-ounce) can pineapple chunks in its own juice, undrained

2 (11-ounce) cans mandarin orange segments, drained

1 large egg, beaten

2 teaspoons lemon juice

1 1/3 cups (8 ounces) Acine di Pepe Pasta, uncooked

3 1/2 cups (8 ounces) frozen non-dairy whipped topping, thawed and divided

3 cups miniature marshmallows

1/2 cup flaked coconut

Maraschino cherries (optional)

In medium saucepan, stir together sugar, flour and salt.
Drain pineapple, reserving juice to equal 1 cup. With whisk, gradually stir juice and egg into sugar mixture. Cook over medium heat, stirring frequently, until mixture comes to a boil. Stir in lemon juice. Cool mixture to room temperature.
Meanwhile, cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.
In large bowl, stir together pineapple juice mixture and pasta. Cover; refrigerate several hours or overnight.
Add crushed pineapple and chunks, oranges, 2 cups whipped topping, marshmallows and coconut; mix gently and thoroughly. Cover; refrigerate until cold.
Top with remaining whipped topping; garnish with cherries, if desired.

Makes 12 servings.

6 cups of Hot Water
1 1/2 cups Hot Cocoa Mix
2 teaspoons Non-Dairy Creamer
3 Tablespoons crushed Peppermint (I like to crush the candy canes)
Marshmallows (optional)

Heat water and add mixture. I use milk for a creamy drink.

4 large onions, chopped

1 stick unsalted butter

2 qt. chicken broth

1 Tbsp. thyme

Freshly grounds black pepper

1/2 C. heavy cream

2 o=lb. fresh asparagus, cut into small pieces

Simmer onions in butter until soft, stirring often. Puree in blender or food processor. Add to chicken broth in large pan and bring to a boil. Stir in remaining ingredients and simmer 30 minutes.

1 29 oz. can pumpkin

4 beaten eggs

1 1/2 C brown sugar

2 tsp. salt

2 tsp. nutmeg

2 tsp. cinnamon

1/2 tsp. allspice

1/2 tsp. ginger

1/2 tsp. cloves

2 13 oz. canned mild

2 Tbsp. melted butter

Mix and pour into greased 9x13 inch pan. Bake for 30 minutes at 350.

1/2 C. butter (do not melt)

1 Pkg. yellow cake mix

Sprinkle on top of pie filling; Sprinkle nuts over topping. Bake 30 minutes longer at 350. Knife come out clean from center when done.

Now that it’s the season of all things “pumpkin” I thought I’d share with you a family favorite. It’s one of those things that if you start eating it you can’t stop. SO…consider yourself warned!

Pumpkin Cookies

Cream together:

2 C Sugar

2 C Crisco

Add:

16 0z. can pumpkin

2 eggs

2 tsp. vanilla

4 c flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. allspice

1 c chopped nuts optional

Cream Cheese Frosting

1 ~ 8 oz. pkg cream cheese

2/3 cup margarine softened

1 tsp. vanilla

2 C sifted powder sugar

Fresh Peach Muffins:

1 egg

1 c. milk

1/4 c. melted shortening

2/3 c. sugar

1/2 tsp. salt

1/4 tsp. cinnamon

1 tsp. lemon juice

1/4 tsp. vanilla

2 c. sifted flour

2 tsp. baking powder

1 c. peeled, chopped, fresh peaches

Beat egg. Stir in milk, shortening, sugar, salt, cinnamon, lemon juice and vanilla. Then sift together flour and baking powder. Stir into milk mixture until blended. Do NOT over mix. Fold in peaches. Fill greased or paper lined muffin tins 2/3 full. Bake at 350 degrees for 15 to 20 minutes OR until brown.

Makes 12-14 muffins.

2 1/4 Cups Cool Whip

1 egg

Powder Sugar

Mix together first three ingredients. Dough will be gooey. Drop one tablespoon at a time into a bowl of powder sugar. Roll around until each ball is covered with Powder sugar. Place onto a cookie sheet and bake at 350 for 10-12 minutes.

Sesame Chicken Recipe

Ingredients:
4 tablespoons soy sauce
4 tablespoons pineapple juice
1 tablespoon honey
1 tablespoon brown sugar
2 tablespoons ginger (grated)
1 pound chicken (cut into bite sized pieces)
1 teaspoon peanut oil
4 servings cooked rice
2 tablespoons sesame seeds
green onions to garnish

Directions:
1. Mix the soy sauce, pineapple juice, honey, sugar, ginger and chicken in a ziplock bag and marinate in the fridge for about an hour.
2. Heat the oil in a pan.
3. Add the chicken and marinade to the pan and saute until the chicken is cooked and the sauce begins to thicken.
4. Serve on cooked rice and garnish with the sesame seeds and green onion.

Peach Cobbler

INGREDIENTS

4 cups peeled, sliced peaches

2 cups sugar, divided

1/2 cup water
8 tablespoons butter
1 1/2 cups self-rising flour
1 1/2 cups milk
Ground cinnamon, optional (however, I highly recommend it!)

DIRECTIONS Preheat oven to 350 degrees F. Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat. Put the butter in a 3-quart baking dish and place in oven to melt. Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes. To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

BANANA CINNAMON FRENCH TOAST

INGREDIENTS:

1 large ripe banana
2 large eggs
1/2 cup milk
1/2 teaspoon cinnamon
4 bread slices
1 1/2 tablespoon margarine
1/2 cup maple syrup — warmed

DIRECTIONS:

Blend first 4 ingredients in processor until smooth. Transfer to a 9×13″ pan. Place bread in milk mixture and soak until all liquid is absorbed, turning bread occasionally, about 20 minutes. Melt butter in large, heavy skillet over medium heat. Add bread and cook until golden brown, about 3 minutes per side.

If you really want to win your kids over, serve with a dollop of whip cream.

Honey-Lime Marinated London Broil

Honey-Lime Marinated London Broil

¼ c. fresh lime juice

2 Tablespoons extra virgin olive oil

1 Tablespoon plus 1 teaspoon of honey

2 Tablespoons minced fresh garlic

1 teaspoon salt

1 ¼ pounds trimmed London broil (top round steak)

Wisk the lime juice, olive oil and honey in a bowl. Stir in the garlic and salt.

Place the steak in a large resealable bag. Pour in the marinade. Seal the bag and rotate it so that the steak is covered with the marinade. Place the back in the refrigerator and marinate the steak for at least 6 hours or overnight, rotating it occasionally.

When ready to eat-preheat the grill to high. Remove the steak from the marinade and place it on the grill. Discard the remaining marinade. Grill for 4-6 minutes per side for medium-rare, or until the desired doneness is reached. Place steak on a plate or cutting board, cover loosely with toil, let stand 10 minutes. Slice into thin slices against the grain and serve immediately.

SPINACH AND ARTICHOKE DIP

SPINACH AND ARTICHOKE DIP

Ingredients:

1 Cup Mayo

1/2 Cup Parmesan cheese, divided

1/4 tsp dry/1 fresh garlic clove

1/8 tsp fresh ground pepper

1/2 lemon, juiced

1 box chopped spinach, defrosted and drained thoroughly (you can find a frozen bag of spinach on your local grocery store’s freezer aisle)

1 can artichoke hearts, chopped

salt to taste

Red pepper flakes to taste (usually just a few does the trick)

To start – Mix mayo with seasonings, 1/4 cup Parmesan cheese and lemon juice. Add spinach and artichokes. Mix well.

Next – Place mixture in oven safe container. Sprinkle remaining parmesean over top.

Bake 350 degrees for aprox. 25 mins, or till bubbly, and cheese slightly brown.

Serve with baguettes or bread, crackers, veggies…

ENJOY!

It's time for a recipe again. It's been awhile since I've posted one so here you go.

TUSCAN CHICKEN PASTA

Servings: 4-6 Servings
cooking Time: 30 minutes

INGREDIENTS:
3-4 Chicken Breasts
6 ounce package of Fusilli or Rotini Pasta
3-4 Roma Tomatoes (chopped)
½ cup Sun Dried Tomatoes (julienned)
2 cups of small Broccoli Florets
¾-1 cup Extra Light Olive Oil
1½-2 Tablespoons Pasta Blend Seasoning (Trader Joe’s has a great one!)
1 teaspoon Garlic Salt
Parmesan Cheese (to taste)
Lemon Pepper

Fill large pot with water, set on stove, and turn heat to high. Bring water to a boil and pour in the 16 ounce package of pasta noodles. Cook for 8-11 minutes until noodles are cooked through and tender. Drain pasta and set aside.

Season chicken with lemon pepper and throw on grill (medium heat for approximately 6 minutes on each side). After you have taken the chicken off the grill, cut in to 1-1½ ” squares and set aside.

In the meantime, chop your roma tomatoes and broccoli florets (set aside). Then, in a small bowl whisk together olive oil, pasta blend seasoning and garlic salt.

Take out a large bowl and add the pasta, chicken, roma tomatoes, broccoli, and olive oil mixture. Now, toss the ingredients to together and season with parmesan cheese (to taste). Serve immediately.

This pasta goes great with a tossed salad and toasted garlic bread. ENJOY!

Well it's that time of year

where everyone is

"whining"

about the heat!

We have reached

way over 100 degrees

for awhile now and probably

still have 2 months to go!

Like I said before

we look forward

to Halloween now!

For those of you that shovel snow

these are our "hibernation" months.

The difference is we

don't

have to shovel that snow.

Instead we get

third degree burns

when we get into our cars.

July

has been a long

and hot month

but I was blessed

to celebrate another birthday

with family and friends.

Thank you for the many cards, gift cards,

calls, emails, facebook messages

and lunch/dinner dates.

I felt your love

and thank you for

being a part of my life.

is moving back home

Woo-Hoo!

She is graduating from

ASU in December

and then will hopefully

do an internship somewhere in the US

January thru May.

Her major is Non-Profit management.

Andrea and Chris'

just returned from Iowa

where they went to visit

Chris's grandparents.

They had a wonderful and meaningful

experience. There is nothing like having grandparents.

They are both keeping very busy at work.

Hershey and Bear are so thankful

we're home for the summer.

They get to stay inside

since the heat is so bad!

They continue to love on everyone.

Road Trip!

Unexpected trips are the best!

We were invited to help surprise Glenn Leadley's 50th birthday party in Coronado Island. So off we went for just a three day trip. Well, everyone kept writing on FB how terribly "HOT" it was in AZ. that we just kept driving up the coast. After leaving the Island and having a blast staying with the Palich family at a beach house they rented. We enjoyed a fabulous 5oth Hee~ Haw party that was much of a surprise to Glenn. He enjoyed the kick stomping time with friends and family.

Our coast drive started on Sunday morning to Carlsbad where we enjoyed shopping, eating, a movie, eating somehow some more and a great night stay on the beach (of course in a hotel).

Day 4 we headed up the coast to San Clemente to say hi to the Peeps that I've met and before we knew it time just flew and it was 5:00 with no reservations to stay the night ANYWHERE! A first for me! The local peeps mentioned a hotel in San Clemente that was a great place to stay so I called and woo-hoo they had a vacancy!

Diana checked us in and somehow was able to get all these Up~ grades for the same price they quoted me earlier. They put us up in a suite and wow we couldn't pass up that room and rate that our 3 day trip ended up being 6! We are both so blessed to have such great understanding guys we're married too! Or I know you're probably saying did they have a choice? LOL

God is so good to have blessed us with a safe trip, lots of laughter with friends, great food, and especially enjoying the beauty He created all around us.
